The Golden Path: A Superior Brut Cava of ‘Guarda’
Our new jewel is a Cava de Guarda Superior Brut. This category reflects the level of care and dedication we put into its creation. The process begins with a meticulous selection of grapes, based on their freshness and aromatic potential. We have chosen two varieties that have always been synonymous with quality in the world of cava: Macabeo and Xarel-lo. These vines have been grown organically, respecting the natural balance of the environment, and carefully selected from the vineyard to their reception at the winery.
The grapes are harvested by hand early in the morning, when temperatures are cooler and the grapes retain their maximum potential. This detail is essential to preserve the unique aromas and characteristics that we seek in Mina de Oro Cava. Once in the cellar, the grapes are cooled to a low temperature before being drained, which allows us to extract the highest aromatic content from the free-run juice, a critical phase in the creation of a high quality cava.
Once naturally decanted, without the addition of fining agents, the must undergoes controlled fermentation. This process, which requires patience and precision, is key to obtaining the base wine that will later give rise to our cava. The wine is then aged on its lees for at least 18 months, a period during which it acquires the nuances and structure that define it.

We are proud to introduce you to our cava, a pale yellow cava with golden reflections that evokes that subtle and elegant glow that we associate with gold. On the nose, Cava Mina de Oro surprises us with aromas of fermentation and fresh pastries, a hallmark of cavas that have undergone long ageing on the lees. The carbon dioxide, the result of long resting on the lees, is elegantly presented, perfectly integrated and balanced, providing a sensation of freshness that extends throughout the entire drink.
