The rise of the Viognier

Viognier was near to extinction but nowadays, as a result of an arduous recovery effort, it survives and great white wines are being made with this variety, such as our Viognier barrel-fermented white wine, Mindoro.

But before introducing you to our Mindoro, let us tell you a few topics about this grape. From the Rhone Valley, this grape is appreciated for its aromatic qualities, its freshness and its finesse, active mainly in temperate climates.

The grapes of this variety are really delicate and its thick skin and its naturally low acidity, makes that the fruits require a great deal of sunshine to ripen properly, but, at the same time, if there is too much heat the grapes can yield overblown, hotly alcoholic wine that lacks the fresh, steely, apricot zing, that is part of the variety’s appeal.

 

Viognier wines

If we have to describe a typical viognier wine, it would be dry, with minus to medium acidity, high alcohol level and medium to full body.

As for the organoleptic characteristics of the wine, they are usually wines with a deep golden color, with an heady aroma where their pronounced floral aromas (flowering tree) and stone fruit aromas (peach, apricot) stand out. Its wines can also be very herbal, with aromas of chamomile, lavender, thyme, and even a hint of pine.

Most of these wines are fermented in inert containers, but although this is uncommon for an aromatic variety, some oak-aged viognier are also produced. In aged examples, and sweeter styles, this potentially overpowering herbal profile is softened by honeyed notes.

As such, careful and considered winemaking can produce wonderfully aromatic, complex wines, without high levels of acidity and with exceptional length on the palate.

 

Our Viognier: Mindoro

The path that enters into the earth in the form of a golden vein. Like the roots of the Viognier vine from which we extract the fruit of Mindoro. The shiny metal in this case in the form of a barrel fermented white wine, as unusual and unique as Murcia.

‘Mindoro’ is a special wine, 100% Viognier,  tremendously aromatic and complex, thanks to its aging in barrels for 6 months, which gives it an elegance and complexity that wine lovers will adore.

Because of it’s full-bodied structure and rich fruit-forward flavor, traditionally best pairs for young Viognier are fatty fish and shellfish. Also we can pair with pasta, risotto, thai food and white meats.

As for the barrel-aged Viognier, like our Mindoro, the pairing varies due to the significant variation in the aromatic profile and its consumption is recommended with ‘soupy’ rices dishes, meats with white sauces, sushi or fish in sauce.

But the best thing is, not to stick to the rules and choose to pair according to your tastes.
